Crispy Roast Chicken Recipe

1. Rinse the chicken and pat it dry. Use kitchen shears or a sturdy knife to remove the backbone and cut lengthwise between the breasts, cutting the chicken in half. Lightly season the chicken with salt and freshly chopped black pepper and let it rest for 10 minutes.
