When we make pork rubs, we focus on flavor and ingredients that will add long, low, slow cooking. And we like the taste to balance between sweet, salty and spicy. This means that we use advanced sugar in the ingredients so that they slowly caramelize over time and are balanced with delicious components.

You can also easily make this dry rub for ribs in bulk and use it on roast pork ribs, pork shoulder, pork chops and some of your favorite cuts of pork.
If we plan to grill pork over high heat, we tend to use more of the flavorful flavor like our chicken seasoning. This is because there is no sugar, and when cooking at high heat the sugar can burn quickly. Therefore, with high heat, we tend to use less or no sugar. This is not a problem when cooking at low heat (as we do for ribs).
We use dark brown sugar as the base for the molasses flavor and the size of the sugar crystals. Kosher salt is the salt of choice for flavor. Buy coarse black pepper in bulk instead of trying to grind it by hand (it’s easier that way).

Make this and store it in a mason jar with a tight lid. This batch makes 2 cups of dry rub, so we put it in a 16-oz wide mouth jar. You can also use small jars and give them as gifts. Store in a cool, dark cupboard and it will last for months. If it starts to harden, just take a fork, and mix or shake the jar.
